North Country Smokehouse has been a producer of artisanal meats and cheeses since 1912. CMC provided planning, design, and construction services for a 65,000 SF greenfield manufacturing facility. The facility was designed to maximize both operating efficiency and food safety with full segregation of the RTE and RTC processes, people, and utilities. All of the main processing rooms, both High Care and Low Risk, were outfitted with hygienic air units that introduce filtered, outside air that is conditioned to maintain 38°F and control humidity.
